Matcha Michi, Michi meaning 'The way of life', was founded on our founder's ethos as matcha being an essential part of daily life, with the art form of making tea our daily meditative ritual.

We hope to share this beautiful art form with everyone, from both our matcha and teawares itself.

Matcha in itself is a luxury tea, with finite supply annually, relying on highly skilled farmers from many generations to bring this amazing agricultural produce to life.

How to make a matcha latte

1. Boil water to 80C (for optimum flavour boil to 60-70C)
2. Soak bamboo whisk in a bowl of warm water for a few minutes
3. Scoop and sift 4g of matcha powder into chawan (or more to taste)
4. Pour 60ml of hot water into chawan with matcha powder
5. Whisk matcha using pre soaked bamboo whisk in bowl in a ‘M’ formation rapidly until a thin foam appears.
6. Add 180ml of warm or ice milk into a cup of choice.
7. Add sweetener of choice (optional).
8. Pour matcha over milk, stir and enjoy!

How matcha is made

Farmers make matcha powder from shade grown Camilla Sinesis tea leaves. The tea leaves are young and kept in the shade for weeks prior to harvest. The highest grade of matcha powder made from tencha, which is usually the first harvest of the season, producing the finest quality tea.

The tea leaves are usually handpicked, and then brought through a steaming and airdrying process. The tea leaves are then sorted, removing dust and impurities from the leaves. Sorted leaves are then grounded,traditionally by hand via stone mills. It is now more commonly grounded by machines in stone mills, an automated process that controls the amount of friction used to prevent ruining the matcha.

The matcha powder is then packaged for shipping, ready to be enjoyed!

How to care for your bamboo whisk

Using your whisk:

Soak your bamboo whisk in hot water for 5 minutes if using for the first time.

When whisking, ensure the prongs are only lightly grazing the base of the chawan and never a firm pressure to prevent breaking the tines.

Before you use your whisk:

Always soak your whisk in warm water prior to each use to soften the tines.

Cleaning your whisk:

Rinse immediately with water after each use. Do not use dishwashing liquid or soap on your whisk.

Handwash only. If clumps are present on the tines/ prongs, gently brush with a soft toothbrush.

Storing your whisk:

Dry and store whisk on a chasen stand to keep its shape and protect the tines. Never rest whisk on the prongs itself.

The Chawan

The matcha bowl ('Cha-wan') has been specifically designed for optimal whisking of the tea.

It is shaped and sized to ensure the tea powder is evenly whisked while having a rounded base and edge to prevent damage to the whisk during the whisking process. It is also the perfect shape, size and weight to hold onto, much like a warm hug!

The chawan is also hand glazed and smooth to prevent breakage of the whisk.

Traditionally used in tea ceremonies, made out of Japanese ceramics, tea can be drank directly from the bowl once whisked.

Modern chawan includes a spout to facilitate pouring of the tea into cups to prevent spillages.

All of our chawan are made in Japan Gifu prefecture, and shipped directly from small local Japanese ceramic businesses.
